We harvest with whole bunches and use
deliberately long infusions to reveal the f ruit’s
f inesse and preserve its f reshness and elegance.
A slow and meticulous infusion rounds off the
alcoholic strength while sculpting juices with a
silky texture.
A subtle and discreet
ageing
The differences in soil, rootstocks, and
clones within the same appellation
result in varied grape qualities.
We decided to vinify the juices physically
separately until the f inal blending
to preserve the specif ic characteristics of
each plot.
Slow and delicate infusions
Our wines are aged in barrels
that have been seasoned by a f irst life dedicated
to Pinot Noir f rom Burgundy. Imbued with Pinot
Noir, the pores of the barrels leave virtually
no mark on the Syrah, allowing it
to reveal itself with delicacy.
